At first glance, these may seem like nothing to be proud of admitting you like to eat. But anyone with that attitude has obviously not eaten one of these! Bacon, dates, smoked almonds; add cocktails and fun people and we could eat these every day. Even the name suggests a party! We’re not sure where the name comes from, but the church cookbooks Mike and I have inherited from our parents refer to them that way. Some of the best recipes on earth come from old church cookbooks :).
The dates in this batch were a gift from the Saudi Arabian Embassy. Maybe we shouldn’t tell them that we wrapped them in pork…
Devils on Horseback. A.k.a. Bacon-Wrapped Dates
A bunch of pitted dates (I usually make about 40-50)
Smoked, salted almonds (one for each date)
Bacon, snipped with the scissors to a length that will fit around the dates.
Stuff the almond inside the date, then wrap the little piece of bacon around it. If you want to get fancy and make sure the bacon doesn’t pop open, stick a toothpick in each one. Bake at 400 degrees for 7-10 minutes.
