Peanut Butter Squares
There is nothing “Christmas” about this recipe – no spices, dried fruit, or sprinkles – but Mom always made these at Christmas, and they were a favorite of my little brother and me. Like a giant, square Reese’s peanut butter cup. No wonder we like them so much! They also freeze great, and if you are impatient, taste good frozen :).
3/4 cup peanut butter (creamy or crunchy is fine)
1/2 cup (112 grams) melted butter
1 cup graham cracker crumbs
1 1/2 cups powdered sugar
1/2 tsp vanilla
1/2 tsp salt (I always add salt)
Mix all the ingredients together. Press the mixture into a 8 or 9 inch square pan lined with foil. If you use a 9 inch pan, they will taste as delicious but be a little thinner. Next, melt the topping (in the microwave is fine) and spread over the top:
1 cup (about 160gm) chocolate chips
2 Tbsp butter
Refrigerate until firm. They are easier to cut if the top softens a little out of the fridge, but I always keep them stored, covered, in the refrigerator. Or the freezer. It depends on how many other people in the house will be eating them :). Paul, I need you!
